Baking Affirmation

After 3 pathetic attempts at making flaky homemade biscuits over the summer, I really needed some success in the kitchen. My most recent crappy biscuits were over the weekend, which means I had buttermilk on hand and nothing to do with it.

Add buttermilk to the need to bake something that doesn't suck and you get scones!

I found this basic recipe for Coffeehouse Scones and switched the white sugar for brown sugar, added a cup of chopped toasted pecans, a splash of cinnamon, and a generous handful of chocolate chips.

And they are fantastic.

N. loves the weekends because I make him egg sandwiches for breakfast. There's nothing special about them--just a fried egg on toast, but he loves 'em.

It doesn't look like much, but this was my first ever, and, if may say so, delicious, stuffed pablano pepper I made on Tuesday.

I used a combination of recipes because I had many of the ingredients from the cull-bin at the Co-op and didn't want to have to buy anything but the meat.

So, I boiled 2 pablanos in 1 c. vegetable stock and 1 c. water for 3 min., then cooked 1 c. rice in the same water for 30 min. Meanwhile, I cooked onion, ground beef, garlic and taco seasoning 'til meat was brown and onions were tender. I added the rice, diced roma tomatoes, salt and pepper and cooked about 20 min. more until rice was tender. Then stuffed the peppers and baked at 375 degrees F for another 15 min. Sprinkled with monterey jack cheese and chopped cilantro and served with a cold beer! Yum! N. was suitably pleased.

Got the recipe for this delicious avocado and ruby grapefruit salad from The Three Ingredient Cookbook by Jenny White.

All it is, is one sliced avocado, one sliced grapefruit and arugula lettuce. You squeeze the grapefruit skin (after cutting out the slices) to get the juice for the dressing. Mix the juice with salt, a dash of chili powder (or chili oil) and a splash of olive oil. I realize that's more than 3 ingredients, but the book's philosophy seems to be that if you should already have something, like salt, then it doesn't count as an ingredient.
